SOLUZYME LP CS - PROZYN is a lipase-based product that acts specifically on triacylglycerol chains, hydrolyzing fatty acids from triglycerides and releasing short-chain fatty acids responsible for the formation of aromatic compounds in dairy products to enhance the aroma of cheese.

Product Dosage

The dose of Soluzyme LP CS depends on the physical and chemical properties of the substrates, such as substrate concentration, degree of hydrolysis desired, pH, temperature and time of action. As an initial dosage, 0.01% of the total volume is recommended, for a hydrolysis time of 12 to 48 hours, at a temperature of 35 to 45 °C.

Product Dosage

The dosage to be used depends on factors such as protein content and type, process, temperature and pH. For initial tests, the recommended starting dosage is 1% based of the amount of protein substrate. For a better application of the product in the chosen protein base, a pre-dilution of Soluzyme TG HTF can be carried out in water, in the proportion of 1 part of the product to 4 parts of water.

Storage Conditions

Soluzyme LP CS should be stored in a cool, dry place, protected from light, in a properly closed package, at temperatures below 25 °C. Under these conditions, the shelf life is 12 months. It does not require special transport conditions.
