Soluzyme® EE 5000 degrades both the inner and outer chains of peptides, reducing the bitterness resulting from hydrolysis. Soluzyme® EE 5000 operates within the pH range of 5.0 to 8.0 and exhibits optimal performance at temperatures around 50 °C. The enzyme can be inactivated by heating at 90 °C for 30 minutes.
